Ingredients
2 handfuls (2-3 cups)
raw kale
1 tsp
olive oil
1
lemon, juiced
1 tsp
sea salt
3 tbsp
raisins
1 cup (250 ml)
roasted root vegetables of your choice, cut into chunks
1/2-1 cup
edamame
1/4 cup
walnuts

Remove the kale leaves from the stem (try to get as little stem as possible, it's bitter)

In a large bowl, combine the kale leaves with the olive oil, lemon juice and salt.

Throw in some extra olive oil and gently massage it into the kale. 

Tear the leaves into smaller pieces and continue the massage. Keep going for about 2-5 minutes or until the leaves are softened and turn a more vibrant green. *

Add the raisins (golden are best in this mix), root vegetables of your choice (sweet potatoes, beets, parsnips, turnips, celery root, etc.), edamame and walnuts to your kale. Mix until well combined.

NOTE: Kale and edamame are calcium-rich food sources and great for bone health. We suggest you plate up with a zesty lemon dressing of your choice.
