Ingredients

dark chocolate chips, melted
1½ cup
coconut oil, melted
1 cup
dried mulberries/ cranberries/ raspberries, roughly chopped
1 cup
dried goji berries
1/2 cup
candied ginger (chopped)
1/2 cup
walnuts (chopped)
1 tbsp
fresh orange zest
1 tsp
vanilla extract
Pinch of
sea salt

Serves 12

Line a large baking tray (15x15) with baking paper and grease well with coconut oil.

Chop the dried berries, candied ginger and walnuts – small or chunky, whatever your preference – and set aside. 

In a large medium mixing bowl, melt the chocolate chips and coconut oil in the microwave, stirring every 30 seconds. Once runny and glossy, stir in the orange zest, vanilla extract, and1/2 cup dried berries, 1/4 cup goji berries and 1/2 cup walnuts into the chocolate. 

Sprinkle the 1/2 cup berries, 1/2 cup walnuts and remaining goji berries evenly onto the tray, then pour over the melted chocolate mix.

Spread the mixture evenly using a spatula and top with the remaining 1/4 cup berries, 1/2 cup walnuts, candied ginger and sprinkle the sea salt on top of the chocolate.

Place the tray in the refrigerator for at least 2 hours or until the chocolate has set.

Crack the bark and share! Serve chilled or at room temperature.
